Ingredients for Marinating:

Method:
- Cut paneer into small cubes. Take one cup of water with 1/2 tsp of salt in a bowl. Keep paneer cubes soaked in this salt water for 15-20 minutes. If the paneer is taken out from the fridge, then bring it to room temperature and then proceed.
- Drain water completely from the paneer. Add all the ingredients mentioned for marinating (except Lemon juice and Corn flour) and flip gently to coat well. Keep aside for 5-10 minutes. Now add lemon juice and mix gently. Then sprinkle Corn flour and gently flip the paneer using a broad spoon to coat all over well (or you can toss gently with out breaking the paneer). If needed sprinkle some water to coat evenly and to make it soft. Keep aside for 15-20 minutes.
- Now heat a non-stick pan with 3 tbsp of oil. Transfer all the paneer cubes at once (or in batches) and toss gently in low flame till all paneer cubes fried all sides well. Keep aside.
- Cut one onion into four pieces and separate the layers and keep aside. Chop remaining one onion, garlic, ginger and green chillies into fine pieces.
- Heat a kadai with 2 tbsp of oil (you can use leftover oil from fried paneer). Add fine pieces of onion, garlic, ginger and green chillies. Fry till onion becomes translucent. Lower the flame and add onion layers. Saute for 2 seconds. Then add tomato sauce, red chilli sauce and schezwan chutney with little water. Mix well and add pepper powder, garam masala, sugar and salt. Mix well and bring to a boil. Now add fried paneer cubes and toss gently till well coated. Cook for few seconds till it becomes little dry to wet (saucy consistency). Sprinkle chopped coriander leaves and stir to combine.
Paneer Stir
Fry is ready.
Suggestion:
- Can use Capsicum cubes along with onion layers.
- Can use chopped spring onion shoots along with coriander leaves.
