Method:
- Grate the Beetroot into very fine using very small holes of the grater or coarsely grind in the mixer. Break cashews into small pieces.
- Heat 1 tbsp of ghee in a thick bottomed Kadai / Wok. Add grated beetroot and fry in low flame till raw smell goes off.
- Transfer this into a bowl and pour the milk. Mix well and cover with a plate. Place in the cooker and pressure cook for 3 whistles. Allow pressure to come down.
- Heat the remaining ghee in a Kadai/wok transfer cooked beetroot-milk mixture. Add sugar, cashew and raisins. Cook in high flame till it thickens (can cover with a lid to avoid spilling in between stir to avoid sticking to the bottom). Once it becomes thick, lower the flame and add cardamom powder and mix. Cook till the ghee leaves the sides. If needed add little more ghee for extra flavour.
Tasty beetroot halwa is ready.
Tip :
Cooking in low flame tastes better.
