Plantain Flower (Valaipoo) Vada [Starter &
Side dish]
Ingredients:

Method :
- Open pink petals layer by layer, take the
flower flakes (small banana shaped –white in colour).
- Remove the stem in the flakes(black bulb
headed),Shred into fine pieces and soak in salt water for 4-5
Minutes
- Strain the water and gently squeeze the water
out. Heat 1 tsp oil and fry /sauté till the water dries out.
- Soak the Channa dhal for 1 hr and then grid
coarsely without adding water.
- Chop onion, Green chilly & Coriander
leaves into fine pieces. Crush the garlic /cut into pieces.
- Add all the above ingredients to ground Channa
dhal along with Fennel Seed (Saunf),Curry Leaves & Salt.
- Mix together well adding hot oil 3-4 tsp
(adding hot oil makes the Vada crisp)
- Heat required oil in the Kadai. Take lemon
sized ball of the Vada mix and flatten into circular shape and fry till
crisp [Fry in medium flame].
- Serve hot with sauce
Tip : Cooking in low flame tastes better.
Variation – This Vada can also be made with grated carrot &
shredded Palak
