Fish Fry (Pan Fry)

Ingredients:

Fish ( Seer, pomfret and similar big sliced fish)
8-10  Slices
Turmeric
Little
Red chilli / coriander powder mix
3 – 4 tsp (heaped)
Red chilli and coriander powder mix :: 100 : 150 gms.
Salt
To taste
Corn flour
1 tsp ( Flat)
Oil
To  fry

Method:

  1. Wash and clean the fish slices, drain the excess water [ press the slices gently using both hands in between the palm to remove the water]
  2. In a bowl add turmeric, red chilli / coriander mix, salt , corn flour mix thoroughly while it is dry.
  3. Sprinkle little water into the above powder mix and to make it pasty [semi thick]. Rub the paste evenly on both sides till it is fully coated.
  4. In case there is remaining paste mix ensure that this is also equally coated to all the pieces in the bowl.
  5. Marinate this for 1 to 2 hours [could also be refrigerated].
  6. Heat a non stick pan or tawa / thick bottomed pan / tawa. [if you are using thick bottomed tawa/pan heat it well before you pour Oil into it] else the fish would get stuck to the pan.
  7. Pour 1-2 tbsp oil, when the oil becomes hot lower the flame spread the oil evenly all over and place 2 to 3 slices at a time.
  8. Slowly turn it side to side and fry till it is done to golden brown and crisp. Add oil at the sides if necessary while frying [Do not fry in high flame it will harden on top/ burn black and under cook inside]
  9. Serve with Onion Slices and Lemon Wedge
Tip:

  • In case it sticks to the pan while frying add a little corn flour to it to avoid sticking.
  • Variation: You could reduce chilly / coriander mix and add little pepper and garam masala (Ready mix) while making he paste this would give another flavour to the dish.
  • You could also use smaller fish/medium fish variety.
  • For Oil fry : Add little more corn flour to the paste to become thick (not semi-thick) consistency.
