Stuffed bread bajji



Ingredients:

Bread slices
8
Schezwan chutney / any thick spicy chutney
1 cup
Shredded paneer or cheese
½ cup

For Stuffing:


Boiled potatoes
2 big
Green chili
1 – 2 (chopped into tiny pieces)
Red chilli and coriander powder mix 
½ tsp
(mix 1 part of red chilli powder with 1½ part of dhania powder)
Fennel powder
¼ tsp
Garam masala
¼ tsp
Coriander leaves
few
Salt to taste

Oil
1 tbsp

For bajji batter:

Ready-made bajji mix
2 cups (Or gram flour – 1 ½ cup)
Rice flour
½ cup
Red chilli and coriander powder mix
1 tsp
Turmeric Powder
2 pinch
Salt
1 tsp or to taste
Water for mixing

For frying:

  Oil                                                      sufficient quantity

Method:
  1. Mash the boiled potatoes well. Add all the remaining ingredients except oil. Mix all till well blended. Heat 1 tbsp oil in a kadai. Lower the flame and add prepared potato mix. Fry till it forms like a soft dough. Switch off the flame. Keep this stuff aside. Let it cool.
  2. Now take a bread slice. Spread 1/2 or 1 tsp of chutney. In another slice spread the potato stuffing evenly. Over the stuffed slice spread shredded paneer or cheese. Over this slice, place the chutney spread slice (chutney side facing the potato side). Press gently. Prepare with remaining slices and keep ready.
  3. Now start preparing batter. Take mentioned ready made bajji mix in a bowl. Add water little by little and mix thoroughly with out any lumps. Batter should be medium thick dropping consistency.
  4. For home made bajji batter, take gram flour, rice flour, red chilli and coriander powder mix, turmeric powder, cooking soda and salt. Mix well. Now add water and prepare batter in the same way mentioned above.
  5. Place a frying pan or flat thick bottomed kadai. Pour 5 - 6 tbsp of oil and heat till medium hot. Lower the flame. 
  6. Take prepared slice of bread and place in the batter, turning either side to get well coated (you can use a spoon to coat top and sides). Do not keep the bread for too long. It will become soggy and can break off while lifting. Another easy method : cut the stuffed bread slice into four pieces and dip in the batter.
  7. Place this coated stuffed bread slice or slices into the oil gently. Fry in low flame. Do not turn over immediately. Pour hot oil over the slices. Once half done turn over to other side. Fry till light golden brown.
  8. Serve hot with sauce or as it is.

Tip :. You can use two flat paddles or a tongle to flip the bajji.
