Colocasia Dry Fry


Ingredients:

Colocasia
¼ kg
Onion
1 small
Turmeric
2-3 pinch
Red chilli / dhania mix
1 tsp (heaped)
(mix 1 part of red chilli powder with 1½ part of dhania powder)
Salt
¾ tsp
Curry leaves
Few
Oil
2 tbsp (6 tsp)

Method:
  1. Soak colocasia in water for 10-15 minutes, wash thoroughly to remove mud.
  2. Pressure cook it for 1 whistle and lower the flame for 5 mins. Open the lid after 10 mins, remove cooked colocasia into cold water and remove the skin. Cut each into half and keep ready.
  3. Heat oil add Onion, curry leaves fry till onion becomes light brown.
  4. Lower the flame add turmeric, red chilli / dhania mix and salt together.
  5. Mix well, add colocasia fry till golden brown and crisp
Tip: 
  • Cooking in low flame tastes better.
  • Variation : This fry can be done with potatoes too.
  • The same can be done with yam [skin removed and cubed into ½ inch pieces – cook (in low flame) for 3-5 minutes in water adding little turmeric and salt , drain & cool and continue with above procedure
