Vermicelli Omelet



Vermicelli Omelette

Ingredients:

Vermicelli (Roasted)
1  Cup

Onion
1   Medium

Green Chillies
2-3    Nos

Curry Leaves
7-8    Nos

Egg
3-4    Nos

Ginger Garlic Paste(Optional)
¼    Tsp

Red Chilly/Dhania Mix
¼   Tsp

Turmeric       
2  pinches

Salt
To  Taste

Oil
To  fry

Coriander Leaves (Optional)
2 tbsp Chopped

Tip :
Mix Chilli Powder & Dhania Powder  Ratio  :: 100 : 150 gms  for best mix

Method :
  • Heat 5-6 cups of water in a broad vessel with little salt. 
  • When the water starts boiling add vermicelli. And cook till it is tender.
  • Drain off the water in colander/strainer and keep it in a big bowl.
  • Cut/chop Onion & Green chilli into fine pieces. 
  • Place Kadai/Wok - Pour 2 Tsp Oil. Fry Onions /Green Chilli for a minute or two.
  • Add this into the bowl containing vermicelli along with other ingredients - Ginger / garlic paste, Curry  leaves, Red chilly / Dhania mix, turmeric powder, coriander leaves, salt & eggs & Mix  well.
  • Heat pan/tawa, rub with little oil  pour a ladle full of prepared mix in the center and spread like Oothappam adjust flame while cooking.
  • Add a tsp of oil around the sides and fry on both sides. (Do not over fry)
  • Serve with chutney / sauce 
 Tip : Cooking in low flame tastes better.
