Brain Spicy Masala




Brain Spicy Masala   [ Normally served with Rice, Roti  & Chapatti]

Ingredients:

Brain
2  Nos

Onion
1  Big

Bangalore Tomato
1  Medium

Ginger garlic paste
½ tsp

Oil
2 tbsp

Curry Leaves
6 -8 nos


For Marinating

Turmeric
2-3 pinch

Pepper Powder
½ tsp

Saunf (Fennel) Powder
½ tsp

Red chilly/Dhania Mix
1  tsp (flat)

Garam Masala (ready mix)
¼ tsp

Clove /cinnamon mix
2  Pinch

Salt
To taste


Tip :

·         Red Chilly  & Dhania Powder mix :: 100 : 150 gms.
·       Grind equal portion of Clove & Cinnamon mix Store in Air Tight   container – 10 : 10 gms
Method :
  • Wash the brain and gently cut each into 4-5 pieces.
  • Add all the marinating ingredients into the brain & mix well with little water, marinate for ½ hour.
  • Cut Onion into fine pieces and chop tomato into small thin slices.
  • Place Kadai /wok pour oil, Add chopped onion and curry leaves fry till light brown.
  • Now simmer the flame and add chopped tomato along with ginger garlic paste fry till soft & the oil leaves the sides.
  • Now add the marinated brain with ¼ cup of water, mix gently. Take care that you do not break the brain while mixing.
  • Close with a lid and cook for 5-6 minutes. Now open and fry gently till oil leaves the sides.
  • If needed  more oil /pepper powder could added.
  • Note:  Do not raise the flame, cook only in simmer flame else brain will get smashed.

Tip : Cooking in low flame tastes better.
