Ingredients:
White
Pumpkin (Grated ) 4 Cups
Sugar 2 Cup
Food Color
(Red) 2 Pinch
Ghee 3 Tbsp
Elaichi
Powder ½ Tsp
Cashew 10-12 Nos
Raisins 10-12 Nos

Method :
- Grate pumpkin. ( Do not squeeze out the water)
- Pressure cook it for 5-6 Whistles (Place this in a smaller vessel covered with Lid /plate and pressure cook – If directly kept the foam from the vegetable oozes out)
- Now strain the excess water from the cooked pumpkin on a thin muslin cloth.
- Place Wok/Kadai on the stove and melt the ghee.
- Simmer the flame then add the broken cashew & raisins (the stem removed in raisins)
- Add the cooked pulp to the fried ghee mix & Blend well.
- Add sugar and food color. Mix & Fry well till the ghee separates at the sides (Adjust the flame suitably).
- Flavour this with Elaichi and can also be garnished with grated Badam & musk melon seeds.
- Serve hot.
